So what is Ghee? And why should you put Ghee into your diet

Organic Sol Ghee, uses Ghee that is made from butter that has been clarified to remove all the milk solids and moisture. This careful process turns the butter into a pure, golden cooking oil with many nutritional benefits and medicinal qualities.

The removal of the milk solids and casein enables ghee to be shelf stable and not require refrigeration. Generally people who are lactose intolerant usually have no problems consuming ghee.

Ghee does not contain any nasty trans fats, it is indeed a healthy fat. In India, Ghee has always been a sacred and celebrated symbol of nourishment, healing and auspiciousness; especially in the daily rituals of worship
and cooking.

Ghee brings out flavour and especially with herbs and spices. Many of the medicinal properties of herbs and spices can be absorbed, and transported to targeted areas of the body with ghee.

Ayurveda, the ‘science of life’ in India, recognises Ghee as an essential part of a balanced diet, and considers it to be the best fat one can eat. You can use Ghee in place of any cooking oil – Ghee has a very high ‘smoke point’ or heating temperature making it ideal for frying.

Since it cooks at a higher point than almost any other oil, it won’t break into free radicals like other ones. Free radicals can potentially be harmful to one’s health, and when an oil smokes, it can be hazardous to a person’s respiratory system if constantly breathed in.

Ghee is shelf stable so can be stored in the cupboard, however you are still able to store in the fridge if you prefer.

Sol Ghee is made from butter from Grass fed only dairy cows. The Certified Organic Ghee is made from butter from grass fed cows from a certified organic dairy farm. Ghee is a healthy fat rich in vitamins such as Vitamins A,
D, E, and K. These vitamins are important for promoting bone and brain health, and for boosting the immune system.

Ghee made From Grass-Fed Cows Contains CLA – Conjugated linoleic acid or CLA is higher in grass-fed beef and in products made from their milk.

While research is still diving into the benefits of CLA, initial studies indicate that it may help to reduce tumors, lower cholesterol and high blood pressure, reduce inflammation, and actually lower body fat.

Ghee Contains Butyrate, an Essential Short-Chain Fatty Acid. Butyrate, or butyric acid, is a short-chain fatty acid that acts as a detoxifier and improves colon health. It’s been shown to support healthy insulin levels, is an antiinflammatory, and may be helpful for individuals suffering from IBS, Crohn’s disease and ulcerative colitis.

So many great health benefits from Ghee, too many to mention, but it is also so versatile in cooking. I use in place of any cooking oil but find it particularly delicious when frying mushrooms or tomatoes. Its great for baking your potatoes, to fry eggs, and of course to fry any pastes at the start of any of your curry dishes.

My kids favourite is Ghee pasta… simply boil your pasta and stir thru ghee until melted. It creates a lovely buttery pasta dish. And I always add to my steamed rice which I have with my Dhal or curry…See my recipe below! Enjoy!

Perfect Sol Ghee Rice Recipe

Ingredients:

1 cup of Basmati Rice
2 cups of water
1 tbsp of Sol Ghee

Basmati rice is easy to digest, full of nutrients and balances all three Dosha’s. I like to use organic basmati rice where possible, organic always tastes better!

Method:

Wash the rice three times, add boiling water and a tablespoon of Sol Ghee, stir thru. Simmer on low temp with a lid on for 15-20 minutes. You can even add
another spoonful at the end for a more buttery taste. You will never taste rice better!

Serves 2-3.

Cheese is still NOT cheese

Cheese is still not cheese.

This is something I’ve written about to you before, now with a new twist. It started last year when a company called Castle Cheese came under fire for distributing fake parmesan after a fired employee tipped off the Food & Drug Administration.

A subsequent investigation found that “no parmesan cheese was used to manufacture” the company’s Market Pantry brand of parmesan cheese. It was made with several other cheeses and wood pulp to save money.

The irony?

It was being marketed as “100% Grated Parmesan Cheese.” And this wasn’t some small snafu. The fake cheese was being sold through Target and via Associated Wholesale Grocers, which supplies 3,400 retail stores in 30 states.

A subsequent investigation by Bloomberg News found that several national brands were selling 100% Grated Parmesan cheese that had high levels of wood pulp. Wal-Mart’s Great Value 100% Grated Parmesan Cheese was 7.8% wood pulp. Kraft’s was 3.8% wood pulp.

Lots of lawsuits ensued… And last week over 50 of them were simultaneously thrown out of court by U.S. District Judge Gary Feinerman. The lawsuits alleged that touting “100% Grated Parmesan Cheese” was deceptive since the cheese contained large amounts of fillers. Kraft Heinz, Jewel-Osco parent company Albertsons, and other large retailers and manufacturers were the defendants.

The judge sided with big business, writing in his ruling that these kinds of “labeling and marketing, when viewed as a whole … are not deceptive.”

The point here is that in Bizarro World, cheese that is 92.2% parmesan is close enough to 100%. And a U.S. court will uphold corporations’ ability to lie about it.

You think if we took 7.8 cents out of every dollar Judge Feinerman earned he would rule that he was getting 100% of his salary?

100% cheese not being 100% is fake. Unless a judge says otherwise.
